Beef Enchiladas: A Flavorful Mexican Classic

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) enchilada sauce
  • 1 tsp cumin
  • 1 tsp chili powder
  • 8 flour or corn tortillas
  • 2 cups shredded cheese (cheddar or a Mexican blend)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the ground beef, chopped onion, and garlic. Cook until the beef is browned and the onion is soft, about 5-7 minutes. Drain any excess fat.
  3. Add cumin, chili powder, salt, and pepper to the beef mixture. Stir in ½ cup of enchilada sauce and remove from heat.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. To assemble the enchiladas, take a tortilla and place about ¼ cup of the beef mixture in the center. Sprinkle with cheese, then roll up the tortilla tightly. Place seam-side down in the baking dish. Repeat with remaining tortillas.
  6. Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  7. Bake uncovered in the preheated oven for 20-25 minutes, or until the cheese is bubbly and slightly golden.
  8. Let cool for a few minutes, then garnish with fresh cilantro if desired. Serve hot.

  • For extra flavor, sauté some bell peppers along with the onion.
  • Try adding black beans or corn to the beef mixture for added texture.
