Easy Greek Pasta Salad

Ingredients

  • 8 oz. rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Cook the rotini pasta according to package instructions. Drain and let cool.
  • In a large bowl, combine the cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  • In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  • Add the cooled pasta to the vegetable mixture and pour the dressing over the top.
  • Toss gently to combine. Adjust seasoning if necessary.
  • Garnish with fresh parsley before serving.
