Crispy Baked Parmesan Zucchini Fries

- 2 medium zucchinis
- 1 cup breadcrumbs (panko recommended)
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large eggs
- Cooking spray
Instructions

- Slice zucchinis into fries, about 1/4 inch thick. Place them in a colander and sprinkle with salt. Let them sit for 15 minutes, then pat dry with paper towels.
- In a bowl, combine breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- In another bowl, whisk eggs until well combined.
