Chai-Spiced Oatmeal Cookies

Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the oats, flour, baking soda, cinnamon, ginger, nutmeg, and cloves.
  • In another bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract to the butter mixture, and mix until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the raisins or chocolate chips if using.
  • Drop rounded tablespoons of the dough onto a lined baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
